I played a lot of games specifically on mobile; codm, sky, apex legends, honkai, ToF, asphalt 8 & 9, pgr, etc. but the best console-like graphics I have experienced in a mobile is genshin impact, this may look biased but it isn't. For context, I also played a few games in PS4 & pc such as horizon zero dawn, valorant, apex (pc), 2 assassin's creed games; origin & unity.
The graphics in GI is absolutely stunning, even though I downgrade my graphics to medium with 60fps before sumeru drops, it doesn't fail to amaze me. Sure, other games like ToF provides more past faced exploring and many grind-able event but in the first 2 weeks, it kinda became bland or boring (for me), maybe it just didn't clicked hard enough for me to keep grinding but don't be mistaken, i'm still playing ToF every day for dailies (ofc) and yes, I know they're different kind of genre but they just have many similarities that I compared them.
Many games being made for mobile have graphics like never before. But for my preference, I totally pick genshin, I just like the exploration and the scale of structures that you can see in the distance like this pictures:

In the first 2 pictures, you can see the scale of the sumeru map with the sand pyramid (idk name) that can be seen in the distance, it's just breathe taking to realize that amount of details in that pictures even though the sand pyramid can only be explored in the nxt update.
In the lighting details of things, in all of the pictures, you can see that the light source hitting the walls, trees, buildings, etc. and making the shadow cascades into the surroundings. Even though i'm not a expert in this category, it just make my jaw drop everytime. There's times that the trees is like a 2D images when i'm far away and became real when i get close and i'm not complaining because it just does that to lessen the burden for my phone like every other games.

In the cutscenes side of things, GI is one step ahead of others (I think), from what i've seen GI uses both pre-rendered and non. In the sword clash of kazuha and raiden (which is sick btw), the effects of electro of raiden and kazuha's deflection is so visually aesthetic and fresh. In the other side, the domain of Ei is sick looking with the moon and torri (I guess) on the bg. For every fight scene, i've seen most fights are aesthetically fluid. If you want to watch those/again just go search on YouTube lol.
Lastly, what I truly love in GI is the smallest details, even though it's not visible most of the times, it does make the gameplay so smooth for transition to happen like the video I watched when raiden switch her fingers depending on the rotation direction of her polearm. Sometimes, hidden lore on items/artifact.
Most important of all is to HAVE FUN!

Yes, I think it's around 15+ gb of resources and my game's rss rn is 20gb because they just recently updated to 3.1
